Black Bean Burrito
My vegetarian black bean burrito recipe is easy and healthy. It takes minutes to make and it includes an impressive list of superfoods: whole grains, tomatoes, spinach, beans, and broccoli sprouts.

Ingredients
- 1 whole wheat tortilla per person
- 1/2 c. fat free refried beans (black or pinto) per person
- 1-2 tomatoes
- 1/8 avocado per person
- Broccoli sprouts
- Baby spinach (optional)
- Grated cheese (optional)
Take a tortilla and fill it with about 1/2 c. of beans. Dice your tomato and add as much as you want. Add about 1/8 of the avocado. Then add some broccoli sprouts. If you want, wash the spinach and add some. Last add the grated cheese. Fold up the tortilla, microwave it for 1 min, and enjoy.
Tips
You can substitute alfalfa sprouts for broccoli sprouts if you wish. Broccoli sprouts pack even more antioxidents than broccoli so if you are not good at eating your broccoli, they are a fantastic choice.
When shopping for tortillas, check the nutrition information. Find some without trans fats and shop around to find the tortillas with most fiber.
You can substitute corn tortillas for whole wheat tortillas if you do not eat wheat.
I chose a vegetarian black bean burrito recipe because black beans are full of antioxidents. However, all beans are great for you. If you don't have black beans around, use pintos.

Delux Kraft Dinner
This is how we roll with our Kraft Dyno-Mite!
- * Two boxes of Kraft Dinner - one with cheddar, one with white cheese - and cook the noodles
- * Finely chopped red onion
- * Finely chopped broccoli
- * Finely chopped red bell pepper
- * Finely chopped seeded green chili pepper
Cook the two pastas in the same pot while you sautee the chopped veggies on low in pan sprayed with Pam till heated through (about five minutes).
Drain pasta and return to pot, pour in sautee'd veggies, two kinds of cheese powder, a pat of butter and some milk and blend it all together before serving.
It's quick and easy meal and my husband loves the flavours the onion and chili pepper add to the mix!
